i love artichokes!
I too adore the artichoke. I usually dip the meaty leaves in the following vinaigrette:
2 tsp Dijon Mustard
1.5 tbs Red wine vinagar
3 tbs olive olive
Pinch of Salt / Pepper
Mix mustard, vinagar, salt and pepper together first (it melts the salt and shit) THEN add the oil. If you can get your hands one of dem mini whisks this shit takes like 35 seconds. I also use the same recipe for salad dressing except I add a clove of garlic.
Aww hell now I want a re-do on my lunch.
